Mouse, keyboard, display, speakers but also (depending on the computer) a USB hub (or 2) and a camera (I have a Mac Mini which lacks a camera), a small toolkit in case I need to do something inside the computer such as upgrade some piece of hardware.
For the core peripherals I tend to go with Apple stuff to match the computer.
Others include an iPod (I hope to get an in-desk dock for it soon), some flash drives, optical discs. I consider those peripherals because they are both peripheral and have peripheral functions to the computer itself.
Beyond that I don't need much else really. For example biometric finger print security scanner or similar. There's a billion and one things you can buy to go with your computer but not everybody needs or wants those things.
For my notebook running 10.5 I may want to get a Wi-Fire. It would have come in handy on the days I was on vacation with my family and the particular hotel we where at only offered their wifi in the lobby.
